
Classic okroshka with vinegar
Description
Many people season their okroshka with kvass, but I suggest trying it with water, sour cream, and vinegar. Give it a try—it's very delicious! By the way, you can safely replace the sour cream with mayonnaise, or use both in equal proportions. An interesting yet very successful version of this popular summer dish, perfect for a hot day. Serve with fresh herbs and sour cream.

Prepare all the ingredients. Boil the potatoes and eggs in advance and let them cool.

Cut the cucumbers into small cubes. Transfer to a saucepan or a large bowl.

Add diced boiled eggs.

Peel the potatoes and cut them into small cubes as well.

Dice the sausage. Wash the radish, trim the ends, and cut into random pieces, but not too small.

Add chopped fresh herbs, sour cream, salt, and ground pepper to taste.

Pour cooled water into a saucepan; you can use mineral water, either carbonated or still. Add vinegar to taste and mix thoroughly. If you wish to serve the dish chilled, place the saucepan in the refrigerator for a while.
