A hearty first course. Chinese tomato soup takes only minutes to prepare. It will appeal to all tomato lovers—the tomatoes used for this dish should be of a sweet variety. If necessary, add a little sugar to the soup. Salt is not specified in this recipe due to the presence of soy sauce, but you may season with salt to taste if needed. The soup is prepared in a wok or a heavy-bottomed pot, though a deep frying pan will also work.
