
Chinese fish soup
Description
The soup is simple and quick to prepare. You can use any white-fleshed sea fish for this soup: hake, cod, saffron cod, or even pollock. Any type of salmon will also work perfectly. The soup is ready to serve.

Prepare the ingredients.

Chinese black wood ear mushrooms should be soaked in warm water before use. Then rinse, trim any roots, and roughly chop.

Cook the rice noodles according to the instructions on the package.

Place the noodles into preheated soup bowls.

Cut the fish fillet into small pieces and quickly fry in a wok with well-heated vegetable oil.

Remove the fish and place it in bowls over the noodles.

Drain excess oil from the wok, leaving only a minimal amount. Add thinly sliced ginger, diagonally cut carrots, half of the chopped green onion, and the white part of leek to the wok. Add wood ear mushrooms and stir-fry for a couple of minutes, stirring constantly.

Add the spices and heat for another half minute.

Pour two cups of boiling water over the vegetables, add soy sauce, oyster sauce, mirin, and sesame oil. Bring to a boil, simmer for half a minute, then pour the boiling broth over the noodles and fish in bowls.

Serve, sprinkled with the remaining green onion and garnished with fresh chili pepper.
