
Sour cabbage soup with sauerkraut and pork
Description
A hearty first course. This is very easy. Preparing broth from pork ribs is very simple. Be sure to discard the first broth and cook using the second one. To get a tasty, rich broth, you must drain it immediately after the scum appears. When preparing the second broth, add a whole onion and simmer the ribs over low heat, allowing them to braise.

1. Prepare broth from pork ribs. To do this, wash the ribs, then place them in water. When the water comes to a boil and foam rises, drain it. Rinse the ribs once again, transfer them to fresh water, and simmer over medium heat until cooked.

2. Wash and peel the potatoes. Cut them into cubes. Add to the broth, after removing the ribs from it.

3. Peel the onion; wash and peel the potatoes. Cut the onion into cubes. Grate the carrot on a coarse grater.

4. Place the onion and carrot on a preheated frying pan with oil. Sauté, cooking the vegetables until golden brown.

5. Remove the previously cooked meat from the ribs and cut it into pieces.

6. As soon as the potatoes are cooked, add the meat and sautéed vegetables to the broth.

7. Squeeze and rinse the sauerkraut in cold water. Then add it to the broth. Continue cooking for another 15 minutes.

8. Shortly before the cabbage soup is ready, add finely chopped greens and salt.
