
Kaurma-shurpa
Description
Kaurma-shurpa soup is hearty, aromatic, and extremely delicious. At the same time, it's very easy to prepare. You can do as I did: cook a beef broth and add vegetables. Or you can first sear the meat, then add water and boil it. Traditional Eastern shurpa is usually quite fatty, but my version is diet-friendly with minimal fat. It turns out just as good and is easier on the liver. Add spices to taste. Serve with fresh herbs and sour cream.

Prepare the ingredients for making shurpa.

First of all, cook a meat broth. Wash the beef and place it in a pot.

Pour water into a saucepan and place on the stove. Bring to a boil, reduce the heat, and skim off the foam.

Cook the beef until done.

Cut the carrots into thin strips and place them in a frying pan.

Add finely chopped onion.

Pour in the sunflower oil and simmer the vegetables over low heat in a pan, stirring. At the end, add the chopped tomatoes and mix. Heat the onions, carrots, and tomatoes for another 5 minutes, then turn off the heat.

Place the onion, carrots, and tomatoes into the pot with the broth and meat.

Clean the bell pepper, wash it, and cut it into strips.

Peel the potatoes, wash them, and cut into cubes.

Add bell pepper and potatoes to the shurpa. Season with salt and pepper to taste. Add bay leaf.

Cook the soup until all the vegetables are tender. At the end, add chopped garlic and fresh herbs.

Kaurma-shurpa is ready. When serving, place a piece of beef in the bowl.
