
Potato soup with onion
Description
The soup is easy and quick to prepare. A thick, hearty, hot soup with a creamy flavor for lunch during cold weather — wonderful, isn't it? Making this soup isn't that difficult — just read the recipe and look at the photos of the cooking steps to convince yourself. You can serve this soup with croutons, finely chopped and fried bacon, or with anything you like — it will still taste delicious. Serve with fresh herbs and sour cream.

Wash the leek and slice its white part. Instead of leek, you can use regular onion.

In a frying pan or in the same pot you'll use to cook the soup, melt the butter over medium heat and sauté the onion until soft.

Peel the potatoes and cut them into small cubes.

Add the potatoes to the onion and pour in the broth. If you don't have broth, you can use water, but then add cream to the soup later. Season with salt, and add bay leaf and thyme.

When the potatoes are cooked, remove and discard the thyme sprigs and bay leaf. Add ground pepper.

Then, using a blender, puree the soup. Adjust the consistency to taste by adding broth or cream (optional).

Finely chop the washed greens, add them to the soup, season with additional spices to taste, and bring the soup to a boil. Serve with croutons.
