
Vegetable potato soup without meat
Description
Perfect for lunch. Serve the soup in bowls while it's still warm. Top with grated cheese and vegetables. This delicate soup is loved by everyone, young and old. I always prepare it without meat. Of course, if you'd like, you could, for example, cook a meat broth. But even without meat, it's very tasty and well-balanced.

Step 1

First, thoroughly wash the potatoes and boil them in their skins. Such potatoes usually need to be boiled for 25 minutes. Once cooled, peel them. Cut the potatoes into small pieces. Grate the carrots on a coarse grater. Similarly, grate the cheese.

Peel the onion and finely chop it. Wash and dry the celery, then finely chop it as well. Sauté the onion and celery in vegetable oil until the onion turns golden.

Place the potatoes and carrots in a saucepan, then add the celery and onion. Pour in the vegetable broth and add salt and pepper to taste. Turn on low heat and cook the vegetables until the broth comes to a boil. Without turning off the heat, add the grated cheese and continue cooking until it dissolves.

Now pour the cream into the pot, mix well and simmer for another 3 minutes. After that, remove the pot from the heat and start pureeing the soup using an immersion blender. You should get a thick mixture. The degree of vegetable pureeing can be adjusted to your preference.
