Potato puree soup with shrimp

Description

Hearty and aromatic soup. If you enjoy creamy pureed soups, you can replace part of the broth with medium-fat cream. Alternatively, to achieve a creamy consistency, drop a few tablespoons of processed cheese into the hot broth and let it dissolve completely. For extra flavor, add a bit of garlic pressed through a garlic press. Serve with fresh herbs and sour cream.

    Peel the onion and chop it into small pieces. To neutralize the sharp smell of onion juice, periodically rinse the knife with cold water. Sauté the chopped onion in a pan with vegetable oil until translucent. Transfer the onion to a blender.

    Boil the potatoes in salted water until cooked. Then drain the water and let the potatoes cool slightly. Now place the potatoes in a blender together with the onion and blend into a puree. Gradually add broth to the potato and onion mixture until a thick mass forms. Season with salt and pepper to taste.

    Thawed peeled shrimp should be lightly sautéed in a pan. It's best to use butter for frying. Once the butter is hot, sauté the shrimp for one minute on each side.

    Pour the potato and onion soup into deep plates. Place the fried shrimp on top. To garnish the dish, chop parsley and sprinkle it over the plates. You can also decorate the dish with ground black pepper or paprika.
