
Mashed potato soup with mushrooms

1. To save time when preparing this soup, start with the ingredient that takes the longest to cook. In our case, it's the potatoes. Place a pot of water on the stove and turn on the heat. While the water is coming to a boil, wash and peel the potatoes. Once the water boils, add salt to it. Cut the potatoes into several pieces and put them into the water. When the potatoes are cooked, do not discard the cooking liquid—drain it separately. Leave a small amount of the liquid in the potatoes and blend them in a blender until you get a creamy, sour cream-like consistency.

2. While the potatoes are boiling, prepare the following ingredients. Wash and peel the carrots and onion. Chop the onion into small cubes, and cut the carrots into thin strips or grate them on a fine grater. Sort through the mushrooms, wash them, and cut into small pieces. Heat oil in a frying pan and sauté the vegetables in it.

3. Fry the mushrooms separately for 7-8 minutes.

4. Add the fried vegetables and mushrooms to the mashed potatoes. Dilute with the potato cooking water to your desired consistency. Bring to a boil, then remove from heat. Serve with chopped fresh herbs and fried croutons.
