
Potato puree soup
Description
Perfect for lunch. Potato puree soup will delight potato lovers. Bacon can be omitted. Cream and cheese make the soup incredibly filling. Serve the soup hot.

1. Cut the bacon into small cubes. Fry over medium heat until crispy.

2. Place the fried bacon on a paper towel to remove excess fat.

3. In the bacon fat, sauté the chopped onion and garlic with thyme until soft. Season with salt.

4. Add the flour, sauté, stirring, for one minute. Then add a cup of broth and simmer until thickened.

5. Add the remaining broth to the skillet and bring to a boil. Peel the potatoes and cut them into small cubes.

6. Add the potatoes to the broth. Cook over medium heat until the potatoes are tender.

7. Remove the thyme sprigs from the soup. Take the potato soup off the heat and blend with a hand blender. Add the cream and grated cheese. Heat gently, stirring, until the cheese is melted. Do not bring to a boil. Garnish the finished potato puree soup with bacon and chopped green onions.
