
Potato soup
Description
The soup is easy and quick to prepare. This is a very simple and inexpensive potato soup recipe, yet one of the most beloved recipes in many countries around the world. Just add a baguette or croutons for a hearty meal. A true find for cold winter days.

1. Peel the potatoes and cut into large cubes. Peel the onion and finely chop.

2. Place the butter in a frying pan over medium heat and wait until it melts and begins to foam. Add the potatoes and onions to the pan and reduce the heat to low. Mix the potatoes, onions, and butter well, then cover with a lid. Cook for 10 minutes, stirring occasionally.

3. Transfer the potatoes, onions, and butter from the skillet to a large saucepan. Add vegetable broth, cumin, parsley, garlic, salt, and pepper. Cook over medium heat for 20 to 25 minutes, stirring occasionally. The soup is ready when the potatoes are soft enough to be mashed.

4. If you have a blender or food processor, use it to turn the soup into a purée. Reheat afterwards. Alternatively, mash the contents of the pot by hand using a potato masher. Serve with croutons or French baguette. Can be frozen.
