
Curried lentil and pumpkin soup
Description
The recipe won't take much time. You can add any spices to the soup to taste; onion can be replaced with leek. If you like fresh ginger, add a piece of grated ginger root (peeled) together with the garlic, sauté, and then cook the soup according to the recipe. Good luck! Serve with fresh herbs and sour cream.

Sort the lentils and rinse them thoroughly under water. If your lentils take longer than 20 minutes to cook, they should be boiled in salted water. I chose green lentils, and the package indicates a cooking time of 20 minutes, which is perfect for the soup.

Chop the vegetables: press the garlic, grate the carrots, and cut the onion and pumpkin into small cubes. Peel the tomatoes and cut them into pieces.

In a saucepan, heat the vegetable oil and sauté the spices with garlic for a minute.
