
Cabbage salad with gherkins
Description
An easy-to-prepare dish. Cabbage salad with cornichons, red onion, capers, mustard, and mayonnaise has a refreshing, tangy flavor. This salad can be served as a standalone dish or used as a filling for hamburgers. The cabbage salad turns out very light and low-calorie. Serve chilled.

1. Shred the cabbage to yield about 5-6 cups. Mix the shredded cabbage with 1 teaspoon of salt in a colander or sieve set over a bowl. Let stand for at least 1 hour or up to 4 hours. Rinse the cabbage under cold running water. Dry the cabbage thoroughly using paper towels. Place the cabbage into a large bowl.

2. Slice the red onion and cornichons.

3. Mix the onion, wine vinegar, and sugar together in a small bowl. Let stand for 15 minutes, then stir in capers, cornichons, marinade, mustard, mayonnaise, and freshly ground black pepper.
