Cabbage Soup

Description

The recipe won't take much time. Kapustnica or kapustnyak is a well-known soup not only in Slovak cuisine, but also in Russian, Belarusian, and Ukrainian cuisines. Sauerkraut, smoked meat, and mushrooms give this soup its unique flavor. Potatoes should be boiled before adding the sauerkraut, as they cook slower in an acidic environment.     Prepare the necessary ingredients. Wash and peel the potatoes, mushrooms, onion, and garlic.

    Cut the potatoes into medium cubes, cover with water or broth, and add peppercorns and bay leaf. Bring to a boil, then simmer over medium heat until the potatoes are tender.

    Heat vegetable oil in a skillet and sauté the onion until translucent. Cut the smoked ham (meat or bacon) into thin strips and halve the mushrooms. Add the ham and mushrooms to the onion and cook for 2 minutes.

    Add paprika, cumin, minced garlic, and mix well.

    Add the sauerkraut and sautéed vegetables to the broth with potatoes, bring to a boil. Cook until the sauerkraut is tender, but not overcooked. For me, this took 10 minutes. Remove the kapustnitsa from heat and let it steep for 10 minutes.

    Pour onto plates and serve.
