
Cabbage with carrots and vinegar
Description
The recipe won't take much time. For me, this salad is a symbol of childhood, of school cafeteria lunches and my mom's reminders: "You need to eat your vitamins!" Actually, I never needed much convincing—I always loved cabbage with carrots and vinegar. Then at some point we suddenly learned that vinegar isn't healthy, so salads started being dressed with lemon juice instead. Eventually, school ended, and with it, those set-menu lunches... But even as an adult, from time to time I still make this "unhealthy" salad and enjoy it just like I did as a child. Let's recall together the simple recipe for cabbage with carrots and vinegar, and take a little trip down memory lane, shall we? Serve it up.

Thinly slice the cabbage with a sharp knife

Salt and rub by hand until it releases juice. The "older" and tougher the cabbage, the more intensively you need to squeeze it :)

Peel the carrots and grate on a coarse grater.

Peel the onion and slice it thinly into half-rings.

Wash the herbs, dry and chop them. Set aside a few sprigs to decorate the salad.

Mix vinegar with vegetable oil and pepper.

Place all ingredients in a salad bowl and mix. Pour the dressing on top, mix again, and refrigerate for half an hour. That's it—your "childhood salad" is ready to eat! :) By the way, it makes a great snack to accompany not-so-kid-friendly drinks;)
