
Zhurek
Description
Żurek is also known as white borscht. Thanks to the potatoes (as you'll learn below), it acquires a white hue. This soup is very filling and delicious. It is traditionally considered a festive dish, but in fact, you can prepare it anytime. It can easily serve as a complete, standalone meal. I make it in a large pot, which is enough for our family for two days. So, here is the żurek recipe for your attention. I wish you well :) Serve the soup hot.

Step 1

Cut the bacon into small cubes and place in a heated pan, previously adding your preferred frying oil. Fry for about five minutes, until the fat becomes translucent.

Add chopped onion to the meat and sauté until the onion becomes soft, about five minutes. Then pour in chicken broth and water. Simmer over low heat for 30 minutes.

Peel and chop all the vegetables. However, place the potatoes, cut into small cubes, separately.

Add all the vegetables (except potatoes) and cook for another 30 minutes. Then add finely chopped ham to the soup and cook for another 10 minutes.

As soon as you put the vegetables into the pot, pour water over the potatoes in a separate saucepan. Bring to a boil, reduce the heat, and cook until they become tender.

Drain the water from the potatoes. Take a few potato pieces and mash them into a puree. Then add all the potatoes to the soup. The puree will thicken the soup and give it a white tint. Add horseradish and stir again. Cook for a little longer. And your soup is ready! Garnish it with boiled eggs.
