
Italian tomato soup
Description
The recipe won't take much time. This fragrant, nutritious, vitamin-rich, and incredibly colorful Italian soup will make an excellent alternative to traditional first courses. It's not only delicious but also very easy to prepare, despite appearing complex. In Italy, this soup is served in every café and restaurant, while for our country it's a complete novelty and an exotic treat. The dish is served with cheese and croutons.

1. I pour a little olive oil into a saucepan and place it over heat. I peel the onion and finely chop it, then add it to the saucepan and sauté until golden.

2. Peel 2 garlic cloves and finely chop them, then add to the pot with the already sautéed onion, stirring constantly so the garlic doesn't burn.

3. After a minute, add the spices (rosemary, ground black pepper, red pepper, Italian herb mix).

4. Add a can of tomatoes in their own juice to the pot, which can be replaced with fresh blanched tomatoes.

5. Wash and coarsely chop the basil, add it to the tomato soup and mix; cook the soup for 5-7 minutes.

6. After the specified time, add slightly less than a teaspoon of honey to the tomato soup to balance the acidity of the tomatoes.
