Separate the broccoli into florets.

Throw the broccoli into boiling water and cook for 2-3 minutes.

Place the broccoli in a large bowl with ice water. When cooled, drain the water and set aside.

Melt 30 g of butter in a saucepan and sauté finely chopped onion and carrot in it until slightly softened.

Add the remaining butter to the saucepan and melt. Add the flour and stir for 2-3 minutes.
