
Italian soup with chicken meatballs
Description
The recipe won't take much time. The soup turns out very tasty, light and low-calorie. Turnip is a very healthy vegetable; it's best not to replace it with another ingredient. It's quick to prepare, and your family will be delighted. Ladle into bowls and serve.

1. Prepare the vegetables. Cut the carrots and turnips into thin strips. Wash the onion and parsley and finely chop.

2. To prepare the chicken mince, pass the chicken breasts through a meat grinder. Add egg, finely chopped onion and parsley, breadcrumbs, and nutmeg to the mince. Season with salt and pepper to taste, and knead thoroughly.

3. Bring 1 liter of water to a boil in a saucepan. Shape the prepared meat mixture into 16 meatballs and cook in the boiling water for 7 minutes. Remove the cooked meatballs from the water and set aside in a separate dish.

4. Heat the oil in a skillet and pour in ½ cup of broth. Sauté the chopped vegetables in it for a few minutes, then transfer them to the pot.

5. Pour the remaining broth into a saucepan and simmer for about 10 minutes. Place the cooked meatballs into the finished soup, bring the soup to a boil, then turn off the heat. Let the soup steep for 10 minutes in the saucepan with the lid closed.
