
Italian soup with beans
Description
A hearty first course. Before serving, this Italian bean soup is drizzled with olive oil and topped with grated Parmesan cheese, which always gives dishes a distinctive flavor. This recipe is very popular both in Italy and beyond — I personally learned how to make this soup from a cooking TV show. The simplicity of preparation impressed me, so I decided to try it — and it turned out wonderfully. I hope you'll enjoy it too. The soup is ready to serve.

Take ready-made beans from cans. You will need approximately 2 cans.

Peel and chop the onion. I use red onion.

We wash the carrots, peel them, and cut into cubes.

Finely mince the garlic.

Cut the bacon into thin slices.

Heat a little olive oil over medium heat in a saucepan, preferably with a thick bottom. Add bacon, onion, carrot, and garlic, season lightly with salt, and cook for 10–12 minutes until the onion becomes translucent, stirring occasionally. Add herbs to taste, such as thyme or rosemary. Remove the herbs before finishing the cooking. Then add the beans to the pot and season with pepper and salt to taste. Stir well and pour in boiling water. The amount of water depends on how thick you want the soup. Cook for another 15 minutes.
