
Italian fish soup

A hearty first course. Italian fish soup is a delightful, even exotic dish for us, which we cannot afford often. But sometimes we can treat ourselves to this delicious pleasure. When preparing this soup, we can let our imagination run wild, substituting one seafood for another, yet the charm of this dish will remain unchanged. Italian fish soup is served beautifully in individual cocottes. Instead of bread, it's better accompanied by toasts. Elegant, tasty, and sophisticated. Serve the soup hot.

Step 1

In a deep skillet, heat the olive oil and add finely chopped onion and garlic. Sauté until soft, then add the pieces of octopus. Stir and cook until golden brown.

Pour white wine into the skillet and simmer until the wine has evaporated. Add fish broth and continue cooking. Add chili pepper.

Add the squid pieces and cook over low heat.

Prepare 6 ramekins and place in them first the pieces of stewed octopus, then the squid.

Place 1 piece of the remaining fish into each cocotte. Arrange the mollusks and shrimp neatly on top. Cover the fish with tomato slices, add pitted olives, pour in the fish broth, and bake for 5 minutes in a preheated oven at 180°C. Serve the soup hot, sprinkled with finely chopped parsley.
