
Italian Tomato Soup
Description
The original recipe uses canned tomatoes, but they can easily be replaced with fresh ones, provided they are peeled. The soup will turn out thick with a velvety consistency. It is seasoned with spices traditional for Italy and served with croutons. Serve with fresh herbs and sour cream.

1. Pour boiling water over the tomatoes and peel them, then mash them by hand, or better yet, use a blender or potato masher. Melt the butter in a saucepan, add the tomatoes together with the juices released, add the onion and salt, then pour in the water.

2. Bring the contents to a boil and simmer over low heat for 40 minutes, adding salt and spices (garlic powder) to taste.

3. Blend the finished soup in a blender until smooth, ensuring a uniform consistency without any onion pieces. Pour the soup into bowls and serve.
