Spanish gazpacho

Description

A hearty and aromatic soup. I first tried the Spanish soup "Gazpacho," strangely enough, in France, on the French Riviera, where it is sold in supermarkets in packages similar to juice cartons. I really liked it, and since then I've been making it several times every summer. I'm sharing the recipe with you! Actually, there's no cooking involved—you just need to blend all the vegetables in a blender. The recipe is for two servings.

    Prepare the ingredients and thoroughly wash all the vegetables.

    Remove the stems from the tomatoes and, if desired, blanch them lightly. Cut into slices of arbitrary size and place in the blender bowl.

    Grind the onion and garlic, add to the blender bowl.

    Peel and add the cucumbers, bell pepper, and basil sprigs to the blender jar. Add salt, pepper, and pour in a tablespoon of olive oil.

    Grind the contents of the blender thoroughly.

    Pour into bowls, add a piece of ice, a few small cucumber slices, garnish with a basil leaf, and lightly drizzle with olive oil. You can add a crouton prepared in a toaster or toasted in a dry skillet.
