
Indian pea soup
Description
A bright and spicy soup — the perfect dish for a hearty family lunch. Serve it with croutons, toasted bread, garlic bread, etc. The key is to thoroughly soak and boil the peas so they don't remain dense and tough. If you like garlic and hot pepper, feel free to add them while cooking. Ladle into bowls and serve.

Pour hot water over the peas and let them soak for about 2-4 hours, or preferably overnight. Then rinse them.

Transfer to a cauldron, add a couple of bay leaves, and simmer for about 2 hours, adding water from time to time.

Peel the potatoes, rinse them in water, cut into medium cubes, and add to the container. Boil for another 15 minutes.
