
Cold salmon soup with leek

Wash the salmon fillet and cut into pieces.

Wash the salmon fillet and cut it into pieces. Pour wine into boiling salted water, add pepper and bay leaf, then add the pieces of salmon. Bring to a boil, reduce the heat, and simmer for 10 minutes. Remove from heat and let cool. Take the fish out of the broth and strain the broth.

Wash the celery and the white part of the leek, then chop them. Peel the onion and potato, then cut into cubes.

In a saucepan where the soup will be cooked, melt the butter and sauté celery, onion, and leek for 5 minutes. Add the potatoes, sauté for 2 minutes, then pour in the salmon broth and cook the soup for 30–35 minutes.

Cool the soup, transfer to a blender and blend into a puree.

Pour the soup into a saucepan, add the cream, mix and refrigerate for 2 hours. Pour the soup into bowls, placing several pieces of salmon into each.
