
Cold sorrel soup
Description
Cold soups are very popular in summer. Today we are making sorrel soup. First, boil diced potatoes, onion, and sorrel in water. Then add chopped fresh cucumber, green onion, hard-boiled eggs, parsley, and dill to the soup. Serve the cold sorrel soup with sour cream. The soup is ready to serve.

Peel the potatoes, wash and slice them. Place in a saucepan.

Peel the onion, wash it, and finely chop. Add to the pot with the potatoes.

Pour water into a saucepan and cook until the potatoes and onions are done.

Trim the stems of the sorrel, wash it, and chop.

Add the chopped sorrel to the boiling soup. Cook for 5-6 minutes and turn off the heat. Season the soup with salt to taste.

You can chop the eggs, cucumber, green onions, and parsley (dill) and place them in a pot. But I prefer to serve this soup in portions. Wash one cucumber, finely chop it, and place it in a bowl.

Add the chopped green onions, which should also be washed beforehand.

Finely chop one hard-boiled egg and add it to the plate.

Wash the parsley or dill, finely chop and place on a plate.

Pour sorrel with potatoes and onions from the pot into a plate.
