
Cold cucumber soup with yogurt
Description
The recipe won't take much time. I've already shared recipes for borscht, okroshka, or gazpacho, so why not make a cucumber soup with yogurt? It's very tasty, vitamin-rich, and healthy. You can add any herbs to taste, such as celery or cilantro. Yogurt can be substituted with kefir or sour cream. This soup can be stored for no more than two days, but it's best to prepare it right before serving.

1. First, I prepare all the ingredients: I thoroughly wash the herbs and cut off the ends of the stems, wash the cucumber and peel it, then cut it into small pieces of arbitrary shape, and peel the garlic.

2. Put all the ingredients into the blender container, add yogurt, kefir, olive oil, lemon juice (from one half), season slightly and blend until smooth.

3. I put the soup in the refrigerator to chill for a few hours; however, if I'm using chilled kefir and yogurt, it can be served right away. Before serving, I pour it into a soup tureen and add cold purified water, then mix well.

4. Serve the vitamin-rich, delicious, and refreshing cucumber soup in portions, adding salt if needed.
