
Cold soup with cereal
Description
The soup is simple and quick to prepare. Cold borscht is a popular summer dish made with kefir and vegetables, known for its easy preparation. It refreshes well in hot weather, quenching both thirst and hunger. Unlike okroshka, cold borscht contains no meat products. Boiled potatoes go well as a side dish. Preparation: Rinse the rice, place it in a bowl, and pour boiling water over it. Let it sit for 5–6 minutes. Then drain the rice through a sieve and rinse once more. Transfer the rice to a saucepan, add 1.5 liters of water, and cook until done. Blanch the tomatoes with boiling water, remove the skins, and pass them through a sieve. Add the tomato purée to the rice, bring to a boil, then remove the pot from the heat. Add salt and let it cool. Pour in the kefir, then distribute the soup into individual serving bowls. Add sour cream to each bowl and sprinkle with chopped dill. Serve immediately.
