
Cold soup with greens

A hearty first course. I think every family makes cold soup in the summer. It's a delicious and light soup that doesn't weigh down the stomach, as it contains plenty of herbs and vegetables. I've offered you a recipe for cold soup with greens, as it's more nutritious. The greens contain a huge amount of vitamins, especially when they're fresh, just picked from the garden. In this recipe, I've used sour cream in the cold soup with greens, but you can use plain yogurt instead to make the soup more diet-friendly. Pour into bowls and serve.

Step 1

Boil the chicken fillet in salted water. You can add onion and carrot to the broth. Once the fillet is cooked, cut it into cubes.

Boil the beet until tender. Peel and slice thinly into strips. It's better to use young beets.

We peel the boiled eggs and cut them into small cubes.

We also cut the fresh cucumber into cubes. I prefer to peel it first, as it makes it more tender.

Chop the young beet greens, previously washed thoroughly. Also chop the herbs.

Put everything into a pot. Pour in cooled chicken broth, add sour cream, juice from one lemon, and season with salt to taste. Cold soup is ready!
