Wash the beet, peel it, cut into cubes, and boil in water acidified with lemon juice for about an hour and a half until cooked.

Boil the eggs and potatoes and cut them into cubes. Cut the cucumbers and sausage into cubes as well. Finely chop the herbs.

In a bowl, mix all the ingredients and add the mustard.
