Description

Perfect for lunch. Here's a simple recipe for cold soup made with kvass. Of course, it's not much different from the classic version—just a few subtle nuances. But this kvass-based cold soup, slightly sweet and fizzy (look at the photo, you can even see the bubbles), was the one I really enjoyed. I poured the kvass cold soup into bowls, added plenty of sour cream (I like it generous), and ate it with black bread. Kvass cold soup—echoes of summer. Serve the soup hot.

    Fresh cucumbers should be chopped as finely as possible. If they have a tough skin, it's better to peel it off.

    Cut the cooked potatoes as finely as possible and place them in a bowl.

    I grate the radish on a fine grater. This way, it turns out more tender in the refrigerator.

    Now finely chop the sausage and peeled eggs. I believe the finer everything is chopped, the tastier it will be. And of course, if you're using sausage, choose only the best kind with as few unnecessary additives as possible.

    Now it's time to salt our cold soup and mix it well. Everyone should pour in the kvass and add sour cream to their own bowl. Done!
