Description
Perfect for lunch. You can serve it with greens and sour cream.

Place beef legs in cold water and let soak for at least 3 hours, or preferably overnight.

Leave the tails in water as well.

Then scrape the legs and cut them into medium pieces.

Place the legs in a pot with water and start boiling. If you have a pressure cooker, the meat will be ready in just 2 hours, but in a regular pot it will take 6 hours.

Separately cook the tails, removing the fat from the surface.

Then, in a large pot, combine the broths with all the meat. Add the onions. Simmer the hash for another hour.

Strain the khash, removing the meat and onions. You can add pieces of beef to the broth. Season the soup to taste. Serve the dish with fresh vegetables and herbs.
