Sear the meat to remove any remaining hair. Scrape the skin, and cut the head into pieces, removing the brains.

Scald the stomach with boiling water and clean it until it turns white.

Place the head and trotters in a large pot and cover with plenty of water. Add peeled onion to the pot. Bring the water to a boil, then simmer until tender. In another pot, cook the tongue with water and onion. Remember to skim off the foam with a skimmer.

Bring the stomach to a boil with water. Then drain this water and rinse the stomach. Cover the meat with fresh water and now cook it for 6 hours until done.

The broth in which the hooves and head were boiled will be the base of the soup. Add minced garlic and pieces of meat with tongue to it.
