Description
The soup is simple and quick to prepare. I offer you a traditional Caucasian dish, exactly as described. Serve the soup hot.

Step 1

Scald the trotters and clean them thoroughly. Cover them with water and leave for 3 hours. Then cut them into smaller pieces. Place the trotters in water and boil for 7-10 minutes. One hour before cooking is complete, add 2 bay leaves and a peeled onion.

Soak the tripe in water for a couple of hours. Then clean it and rinse under running water. Place the meat in a pot and cook for 2 hours. As soon as the water boils, add onion, bay leaf, salt, and dill.

Add salt to taste to the broth from the hooves, along with the meat separated from the bone and the tripe cut into pieces.
