Description

Perfect for lunch. Today we're making the Caucasian soup called khash. First, put well-washed and cleaned beef trotters into a pot to boil. After two hours, add onion and carrot to the pot, add salt, and continue cooking for another 1.5 hours. Then strain the broth, remove the meat from the bones, chop it finely, and return it to the broth. Bring to a boil and add minced garlic. The khash is ready. When serving, add a pinch of fresh herbs to the soup bowl.

    Thoroughly wash the beef hooves and scrape them with a sharp knife.

    Place them in a large pot, cover with water, and simmer over low heat for 2 hours after boiling. Then add carrots and onion, season with salt, and continue cooking until the legs are tender. This will take about another hour and a half.
