Description

The recipe won't take much time. In Morocco, this soup is usually made with lamb. However, lamb isn't very common in our region, so you can substitute it with chicken, turkey, or beef. Alternatively, you can make harira with water only. Any type of lentils will work. If you don't have olive oil, use regular sunflower oil—it will still taste delicious. This soup uses quite a few spices, including ground cinnamon. I personally enjoy this spice in desserts and baked goods. As for soups and meat dishes, it's a matter of personal preference—up to you. Overall, the dish is very tasty. Serve it with fresh herbs and sour cream.

    Prepare the ingredients for making the soup.

    First of all, wash the chickpeas and cover them with cold water overnight. During this time, they will swell well and cook quickly.

    Pour fresh cold water over the swollen chickpeas and cook until half-done. This took me 30 minutes.

    Rinse the rice and add it to the pot with the chickpeas.

    Do the same with lentils. I had yellow ones, but brown or red will work as well. Cook chickpeas, lentils, and rice until done for another 15–20 minutes.

    Meanwhile, wash and chop the celery, bell pepper, onion, and garlic. Place them in a heavy-bottomed pot. Add vegetable oil and sauté over medium heat for 7–8 minutes, stirring occasionally.

    Then wash the chicken fillet, cut it into small pieces, and add it to the pot with the vegetables. Cook the vegetables with the chicken for another 7-8 minutes.

    Prepare the spices for the soup.

    Add spices to the pot with vegetables and chicken and mix.

    Place the chicken with vegetables, cooked chickpeas with lentils and rice into a saucepan. Finely chop the tomatoes and add them to the soup. Season with salt and pepper to taste. You can add fresh ginger root. Pour in more water until all ingredients are covered. Cook for another 10–12 minutes, then turn off the heat.

    Add chopped greens to the ready soup.

    The "Harira" soup is ready. Let it steep in the pot for 20 minutes, then serve.
