We'll start with the broth. Wash the meat, cut it into small pieces, and cover with water. Cook the broth for 2.5 hours, periodically skimming off the foam from the surface.

Rinse the rice and add it to the soup. Add the chopped onion and herbs tied into a bundle.

15 minutes before the end, add crushed garlic, chili pepper, finely chopped parsley and cilantro, tkemali, khmeli-suneli, bay leaf, and salt.
