Description

A hearty first course. The "Harcho" soup has a Georgian origin, but over many years it has become warmly loved by other nations as well. I like this recipe because it combines sour and spicy flavors. Usually the dish is prepared with beef or chicken, but it can also be made with other types of meat. In addition, the soup can be prepared with walnuts or rice. In this recipe, I will tell you. The soup is ready to serve.

    Cut the beef into medium-sized pieces. Salt the meat and divide it into 2 batches.

    Place an enameled saucepan over medium or high heat and add 2 tablespoons of oil.

    Once the oil is hot, add the first batch of meat to the pot and sear until browned. Then sear the second batch. Remove the seared meat from the pot and set aside.

    Add the chopped onion and celery to the pot. Sauté in oil for 5 minutes until softened. Then add the canned tomatoes with their juice, pour in the broth and water. Add the cooked meat and bay leaf as well.

    When the soup comes to a boil, cover it with a lid and simmer over low heat for 1.5 to 2 hours. During this time, the meat should become tender.
