Description
Perfect for lunch. Why not add beans to "Harcho"? Why not indeed :) They complement all the ingredients perfectly and fit wonderfully into the recipe. I like using canned beans, but fresh ones work too. Serve the soup hot.

Wash the meat and start boiling it to make broth.

Once the meat becomes tender, carefully remove it and strain the broth.

Season the boiling broth with a little salt, add the rice, and cook over medium heat for about 15 minutes.

Sauté the chopped onion in a frying pan, then add the carrot.

Add the tkemali, sauté for a couple more minutes, and transfer to a saucepan.

Beef has cooled slightly, cut it into portion pieces and add to the soup. Add the beans.

Toast the nuts in a dry skillet and chop them slightly in a blender.

Place the nuts, garlic pressed through a press, and spices into the pot and cook for another 5-7 minutes.

Remove the "Harcho" from the heat, cover with a lid, and let it steep for half an hour. Before serving, add fresh herbs to the plate.
