
(Georgian soup with nuts)
Description
A hearty first course. Traditionally, we prepare the soup with beef, but if you have another type of meat or chicken on hand, you can try using those as well. The rich aroma of spices makes "Harcho" truly unique. The combination of nuts, vegetables, meat, and rice is definitely worth trying. Ladle into bowls and serve.

First, you need to cook the broth. To do this, wash and dry the meat, place it in a pot with clean water, and bring to a boil. Be sure to skim off the foam! Simmer for about an hour over low heat, season with salt to taste, then continue cooking until the meat is tender.

To prepare the dressing, chop the onion and place it in a pan with heated oil.

Sauté until translucent and add the diced tomatoes.

Simmer over medium heat for 7-10 minutes, stirring gently. Add tomato paste and "Tkemali".

Remove the meat from the broth and let it cool slightly. Strain the broth and return it to the heat. Once boiling, add the rice, previously rinsed. Cook for 10–13 minutes.

Transfer the dressing to a saucepan. Add spices and salt to taste. Simmer for about 10 minutes.

Cut the slightly cooled meat into portion pieces and return it to the pot.

Chop the nuts into crumbs and add to the soup.

At the end, add the minced garlic and herbs. Remove the finished soup from the heat and let it stand, covered, for 20–30 minutes.
