
Harcho (Georgian soup)

A hearty first course. I present to you a step-by-step guide. Serve the soup hot.

Step 1
Wash the meat and place it in a pot. Add 3-3.5 liters of water and put it on the stove. Peel the vegetables for the broth (basic ones are onion and carrot) and add them to the pot. Add the spices.

After boiling, reduce the heat to minimum and simmer the broth for an hour and a half. Season with salt to taste.

Remove the cooked meat carefully. Strain the broth and return it to the heat.

As soon as it boils, add the rice. Simmer over low heat for about half an hour.

Heat vegetable oil in a frying pan and sauté the chopped onion until lightly golden.

Place the tomatoes on the skillet. Let them simmer for about 5 minutes.

Add a little khmeli-suneli and hot pepper.

Chop the walnuts slightly, but not into dust!

Place them in the pan, carefully mix with the vegetables. Leave on heat for just 2-3 minutes, then transfer to a saucepan.

The meat has cooled down a bit, so it can now be cut into portion pieces and added to the soup.

Add tkemali and garlic pressed through a garlic press. Simmer the Georgian soup "Harcho" for another 5 minutes, then remove from heat and let it steep for half an hour. Add fresh herbs before serving.
