
Harcho (Georgian spicy soup)
Description
Perfect for lunch. This soup is a great idea for a family lunch. The rich broth, along with the nuts, gives it an amazing flavor and richness. It's very important not to overdo any of the spices, so that everything is in balance. You can add the chili pepper whole and then carefully remove it from the pot before serving. Trying "Harcho" at least once is definitely worth it. Ladle into bowls and serve.

Place the beef in a large pot, cover with water, and add the vegetables for the broth (onion, carrot, root vegetables). Bring to a boil, skim off the foam, and let it simmer over low heat for about 1.5 hours.

In a skillet with heated vegetable oil, sauté the chopped onion (5-7 minutes).

Add the diced tomatoes.

Season with a little salt and add some spices.

Place a couple of spoons of tkemali and tomato paste on the pan.

Carefully strain the broth, let the meat cool slightly, cut it into pieces, and return it to the pot. Add rice to the boiling broth and cook for about 15 minutes over medium heat.

Add half a bunch of mixed greens to the pan with the vegetables.

Chop the nuts slightly.

Transfer the vegetables from the frying pan to a pot.

Add salt, spices, nuts, and garlic pressed through a press to taste.

Place the second half of the greens into the pot, remove from heat, and let stand, covered, for another 15–20 minutes before serving.
