Description

A hearty first course. If there are many variations of borscht, including vegetarian ones, why not try making "Harcho" with water too, right? This version definitely wins in terms of time—your entire cooking process will take no more than 40 minutes. With spices, herbs, nuts, and "Tkemali," the absence of meat, in my opinion, isn't that critical :) Serve the soup hot.

Instructions

    Step 1

    Pour water into a saucepan (the amount of water depends on how thick you want the "Harcho" to be), bring to a boil, add a little salt, and add rice that has been rinsed several times. Cook over medium heat for 15 minutes.

    Meanwhile, heat the oil in a frying pan and sauté the onion until lightly golden.

    Add the diced tomatoes and cook over medium heat for another 5 minutes.

    Place the tomato paste and "Tkemali" on the frying pan, add spices and salt. Mix everything. After 2 minutes, transfer to a saucepan.

    Simmer the soup for about 10 minutes over low heat. Meanwhile, lightly toast the nuts in a dry skillet and chop them.

    Place the nuts and chopped herbs into a saucepan, remove from heat after a couple of minutes, and let stand, covered, for another 20–30 minutes before serving.
