Description

A hearty first course. Vyatskaya gubnitsa is a traditional soup made from seasonal mushrooms. This dish got its name because in the Vyatka region, as well as throughout the Russian North, mushrooms were traditionally called "guby" (lips). The classic version of this dish is usually prepared with boletus, boletus erythropus, and boletus edulis mushrooms. You can use fresh seasonal mushrooms, dried ones, or previously boiled and frozen mushrooms. Today I'm using the latter option. Give it a try! The taste will pleasantly surprise you. The soup is ready to serve.

    Prepare all the ingredients.

    Sauté the onion and carrot until soft in vegetable or butter oil.

    Add the previously boiled mushrooms and sauté everything together for 5-7 minutes.

    Cut the potatoes into cubes.

    Rinse the rice thoroughly (instead of rice, you can use barley or omit it altogether).

    Add all the ingredients, your favorite spices to taste, adjust for salt, and cook until the rice and potatoes are fully done.
