
Georgian soup with matsoni
Description
A hearty and aromatic soup. If desired, you can add a little crushed dried garlic to the hot soup, which will give the dish a whole new flavor. Alternatively, instead of parsley, you can use fresh cilantro if you enjoy the aroma and taste of this herb.

Prepare the listed ingredients.

Peel the onion and rinse it in water, then cut into cubes. Melt butter in a cauldron and sauté the onion for about 2-3 minutes until golden brown.

Add any type of cooked rice. Cook the grains beforehand for 12 minutes.

Dilute the matsoni with water and pour it into a container, add salt and pepper. Heat almost to boiling, but do not boil! Turn off the heat.

Add the yolk of a chicken egg to the soup, stirring it thoroughly in the hot liquid.

Rinse and chop the fresh herbs, add them to the soup and mix. The dish is completely ready!

Pour the hot matsoni soup into deep bowls or plates and serve. You can serve it with hot unsweetened pastries or croutons.
