Georgian chicken soup
Description
The recipe won't take much time. First, prepare all the ingredients. Rinse the chicken meat thoroughly. Divide into bowls and serve.
Instructions
- 1
Step 1

Place the chicken meat into a saucepan. Pour 2 liters of water over it and start boiling.
- 2
Step 2

While the meat is coming to a boil, finely chop the onion.
- 3
Step 3

Fry the onion in vegetable oil until it browns. But don't overcook it! Remove the onion from the heat, leaving the excess oil in the pan.
- 4
Step 4

Add flour to the pan. Quickly mix it with the butter. Cook over low heat until the flour just barely changes color.
- 5
Step 5

Remove the pan with flour from the heat. Take the meat out of the broth. Add the fried flour to the broth.
- 6
Step 6

Remove the broth from the heat and set aside. Beat the eggs in a small bowl. Add 1 ladle of meat broth to the egg mixture, constantly whisking to prevent the eggs from curdling. Then add a little more broth and mix well. Now pour this mixture into the main soup and stir quickly. The eggs will spread out. Return the soup pot to the stove. Bring to a boil, then immediately remove from heat.

Step 7

Add the fried onion to the soup. Season the soup with salt and pepper. Add spices to taste (preferably oriental spices).
- 8
Step 8

Pour the soup into a bowl. Chop the herbs and generously add them to the soup. Serve immediately.
