Description

A hearty and aromatic soup. "Harcho" is made from beef or lamb. You can find several recipes of this soup with the addition of walnuts, herbs, and hot pepper. The soup is hearty, nutritious, spicy, and thick. If you want to warm up or add a new dish to your home menu, I highly recommend this recipe. Also, the longer the soup is left to steep, the more pronounced its flavors will become. Serve the soup hot.

    1. Place the meat in a saucepan and pour water over it (about 2.5 liters). Bring to a boil and simmer in salted water for 90 minutes.

    3. Peel the onion and cut it into large pieces.

    4. Remove the seeds from the sweet pepper and cut it into small cubes.

    5. Wash the tomatoes and cut them into medium-sized cubes.

    7. Fry the onion until golden brown and add bell pepper, tomatoes, and a spoonful of tomato paste.

    11. Add the bay leaf to the pot and cook for another 15–20 minutes. Remove the soup from heat. Peel and finely chop the garlic, chop the cilantro, and mix them together.
