
Mushroom soup with chanterelles

To prepare the soup, we need to take potatoes, onion, carrots, bell pepper, chanterelle mushrooms, salt, pepper, and spices for mushroom dishes.

In a saucepan, sauté finely chopped onion in vegetable oil. Add chopped carrots.

Rinse chanterelles thoroughly. You can prepare the soup using either fresh or canned chanterelles. The mushrooms are very delicate and cook very quickly. Add the chanterelles to a sauté pan and sauté together with the vegetables for 3–5 minutes.

Now add the chopped bell pepper. Mix and simmer for 2-3 minutes.

Peel the potatoes, cut them into cubes, and add them to a saucepan. Pour in water. Bring to a boil. Once the soup starts boiling, add salt and spices. In addition to ground black pepper, I used a spice mix for mushroom dishes. I added a little of this mix. The blend contains dried white mushrooms. There are very few of them, but they still contributed to the overall aroma of the dish.

Cook the soup for about 15-20 minutes until the vegetables are done. Ladle the soup into bowls and serve hot.
