
Mushroom soup with glass noodles
Description
A hearty first course. You can prepare mushroom soup with glass noodles using any meat broth, and during fasting days, feel free to replace the broth with water. The soup is aromatic, rich, and extremely delicious! Make a note of this recipe. The soup is ready to serve.

Prepare all the ingredients.

Cut the onion into small cubes. Grate the carrot on a coarse grater.

Sauté the vegetables in vegetable oil until soft, then add the mushrooms. I'm using wild mushrooms, previously boiled, but you can use any other kind.

Fry everything together for 5 minutes. Then add soy sauce and minced garlic.

Cook everything together for another few minutes, then remove the pan from the heat.

Cut the potatoes into small cubes.

Rinse the cellophane noodles with boiling water and wash under cold water, then cut them into pieces with kitchen scissors for easier eating.

Pour strained meat broth into a saucepan (can be replaced with water on fasting days).

Add the contents of the skillet and the potatoes. Season with salt to taste and simmer over medium heat for about 20 minutes, or until the potatoes are tender.
