
Chinese-style mushroom soup
Description
Perfect for lunch. Chinese-style mushroom soup takes just minutes to prepare. It's often made with water, but chicken broth makes the soup much more flavorful. As for mushrooms, there's no need to use specific Asian varieties—common button mushrooms work perfectly well, and they're also popular in Chinese cuisine. Don't worry too much about sesame or olive oil; regular sunflower oil is just fine. I'm using udon noodles, which I really love, but they're not essential. Don't be put off by boiled cucumbers—they taste quite similar to boiled zucchini. Overall, this soup is very tasty and filling.

Prepare the ingredients for making Chinese-style mushroom soup.

Peel the garlic, wash it, and finely chop. Do not crush it with a press. Place the garlic in a frying pan.

Wash the green onions, finely chop them, and add to the garlic. Pour in the vegetable oil and sauté the garlic and onions for 2-3 minutes, stirring.

Wash the cucumber, cut it in half, and remove the seeds. Slice into strips. Add to the pan with the green onion and garlic. Fry for another 2–3 minutes.

Clean the mushroom caps. Cut the mushrooms into pieces of arbitrary size and add them to the pan with garlic, green onions, and cucumbers.

Fry for another 2 minutes, stirring.

Pour the chicken broth into the saucepan and add the contents of the skillet.

Bring the soup to a boil and add the noodles.
